  • Fresh okra250g
  • Smoked sausage (e.g., Kielbasa)200g, sliced
  • Onion1 large
  • Garlic3 cloves
  • Crushed tomatoes400g can
  • Tomato paste1 tbsp
  • Smoked paprika1 tsp
  • Vegetable oil3 tbsp
  • Fresh rosemary1 sprig (for garnish)
  • Saltto taste
  • Black pepperto taste

    Soak the white beans overnight. Drain and rinse. Boil until tender, drain, reserving some liquid.

    Trim and cut the okra into pieces. Chop the onion and mince the garlic.

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced smoked sausage and cook until browned. Remove sausage and set aside, leaving the rendered fat in the pot.

    Add the chopped onion to the pot and sauté until softened, about 7 minutes.

    Add the minced garlic and smoked paprika, cook for 1 minute until fragrant.

    Stir in the crushed tomatoes and tomato paste. Cook for 2 minutes.

    Add the cooked beans, prepared okra, and the browned sausage back to the pot. Stir to combine.

    Add enough reserved bean cooking liquid or water to create a stew consistency. Bring to a simmer.

    Season with salt and black pepper to taste. Cover and simmer for 30-40 minutes, until okra is tender and flavors meld. Add more liquid if needed.

    Serve hot, garnished with a fresh rosemary sprig.
