- Pork shoulder or loin700 g
- Onions1 large
- Carrots1 medium
- Garlic cloves2
- Red bell pepper1/2
- Tomato paste1.5 tbsp
- Dry red wine150 ml
- Beef or vegetable broth300 ml
- Bay leaf1
- Smoked paprika1 tsp
- All-purpose flour1 tbsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste

Cut the pork into 2-3 cm cubes. Season with salt and pepper.

Finely chop the onion, carrot, and garlic. Dice the red bell pepper.

Heat vegetable oil in a pot over medium-high heat. Brown the pork cubes in batches. Remove and set aside.

Add the chopped onion to the pot and sauté until softened. Add the carrot and bell pepper, cook for 3-4 minutes.

Stir in the minced garlic, tomato paste, and smoked paprika. Cook for 1 minute.

Sprinkle flour over the vegetables and stir. Cook for 30 seconds.

Deglaze with red wine, scraping the bottom of the pot. Let it reduce slightly.

Return the pork to the pot. Add broth, bay leaf, and enough water to almost cover. Bring to a simmer.

Cover and simmer for 60-75 minutes, or until pork is tender. Stir occasionally.

Remove bay leaf. Adjust seasoning.
