A simplified version of Carbonara that uses pancetta or bacon and a slightly different egg-to-cheese ratio for a quicker, more accessible weeknight meal.

- Pancetta or Bacon, diced150g
- Eggs (yolks)3
- Parmesan cheese, grated80g
- Black pepper, freshly groundto taste

Cook spaghetti according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

While pasta cooks, fry diced pancetta or bacon in a skillet until crisp. Remove pancetta/bacon, leaving some fat in the pan.

In a bowl, whisk together egg yolks and grated Parmesan cheese. Season with black pepper.

Add the drained hot spaghetti to the skillet with the pancetta fat. Toss well.

Remove skillet from heat. Pour the egg and cheese mixture over the spaghetti, tossing rapidly. Add reserved pasta water, a little at a time, to create a creamy sauce. The residual heat will cook the eggs.

Stir in the crispy pancetta/bacon. Serve immediately with extra black pepper.
