- Beef sirloin or flank steak200g
- Kimchi1 cup, chopped
- Gochujang (Korean chili paste)2 tbsp
- Soy sauce2 tbsp
- Sesame oil1 tbsp
- Garlic2 cloves
- Ginger1 tsp grated
- Vegetable oil1 tbsp
- Scallions2 stalks
- Toasted sesame seeds1 tsp
- Saltto taste
- Black pepperto taste

Cook udon noodles according to package directions. Drain and rinse with cold water. Set aside.

Thinly slice the beef. Mince garlic and grate ginger. Chop kimchi.

In a small bowl, whisk together gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and a splash of kimchi juice (optional).

Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned. Remove beef from skillet.

Add chopped kimchi to the skillet and stir-fry for 2-3 minutes until slightly softened and fragrant.

Return the beef to the skillet. Add the cooked udon noodles and the sauce mixture. Toss well to combine and heat through.

Season with salt and pepper to taste, being mindful of the saltiness from soy sauce and kimchi.

Garnish with chopped scallions and toasted sesame seeds. Serve immediately.
