- Pork shoulder or leg800g
- Quinces3 medium
- Onions1 large
- Dried apricots100g
- Prunes (pitted)100g
- Vegetable oil40 ml
- Pork or vegetable broth400 ml
- Honey or brown sugar2 tbsp
- Cinnamon stick1
- Saltto taste
- Black pepperto taste
- Chopped walnutsfor garnish

Cut the pork into 3-4 cm cubes. Season with salt and pepper.

Peel, core, and cut quinces into wedges. Chop the onions.

Heat oil in a heavy-bottomed pot or Dutch oven. Brown the pork cubes in batches. Remove and set aside.

Add onions to the pot and sauté until translucent. Add quince wedges and cook for 5 minutes.

Return the pork to the pot. Add dried apricots, prunes, broth, honey/sugar, and cinnamon stick.

Bring to a simmer, then cover and cook on low heat for 2.5 to 3 hours, or until pork is tender and sauce has thickened slightly. Stir occasionally.

Remove cinnamon stick. Adjust seasoning with salt and pepper. Garnish with chopped walnuts before serving.
