- Pre-cooked rice400 g
- Onion1/2 medium
- Garlic2 cloves
- Canned diced tomatoes200 g
- Chicken broth150 ml
- Olive oil2 tbsp
- Fresh dill1/4 bunch

Clean the mussels.

Finely chop the onion and garlic.

Heat olive oil in a large skillet over medium-high heat. Sauté the onion until softened, about 3-4 minutes.

Add the garlic and cook for 30 seconds.

Add the pre-cooked rice, diced tomatoes, and chicken broth. Stir to combine.

Season with salt and pepper.

Nestle the cleaned mussels into the rice mixture. Cover and cook for 5-7 minutes, or until mussels are opened. Discard any unopened mussels.

Stir in most of the chopped dill.
