Garlic and Oil Noodles (Aglio e Olio)

  • Cooking oil4 tbsp
  • Garlic3 cloves
  • Saltto taste
  • Black pepperto taste
  • Red pepper flakes (optional)1/4 tsp
  • Fresh parsley (optional garnish)2 tbsp, chopped

Steps

    Bring a large pot of salted water to a boil on the stove. Add the spaghetti and cook according to package directions until al dente.

    While the pasta cooks, thinly slice the garlic cloves. If using, finely chop the fresh parsley.

    In a large skillet, heat the cooking oil over medium-low heat. Add the sliced garlic and red pepper flakes (if using).

    Sauté the garlic gently for about 2-3 minutes until fragrant and lightly golden. Be careful not to burn it.

    Before draining the pasta, reserve about 1/2 cup of the starchy pasta water.

    Drain the spaghetti and add it directly to the skillet with the garlic and oil. Toss well to coat.

    Add a splash of the reserved pasta water to help create a light sauce. Toss continuously until the pasta is well-coated and the sauce emulsifies slightly.

    Season with salt and black pepper to taste. Stir in the chopped parsley (if using).
