Ingredients

  • Beef sirloin or tenderloin1.5 lbs
  • Butter4 tbsp
  • Onions1 large
  • Mushrooms8 oz
  • All-purpose flour2 tbsp
  • Beef broth1 cup
  • Sour cream1 cup
  • Dijon mustard1 tbsp
  • Worcestershire sauce1 tsp
  • Egg noodles12 oz
  • Saltto taste
  • Black pepperto taste
  • Fresh parsleyfor garnish

    Slice beef thinly against the grain. Season generously with salt and pepper.

    Cook egg noodles according to package directions. Drain and set aside.

    Melt 2 tbsp butter in a large skillet over medium-high heat. Brown beef in batches, then remove and set aside.

    Add remaining 2 tbsp butter to the skillet. Sauté chopped onions until softened, about 5 minutes. Add sliced mushrooms and cook until browned, about 7-10 minutes.

    Sprinkle flour over the onions and mushrooms, stirring constantly for 1 minute.

    Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

    Reduce heat to low. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Do not boil after adding sour cream.

    Return the beef to the skillet and stir to coat. Heat through gently for about 5 minutes.

    Season with salt and pepper to taste.

    Serve the beef stroganoff mixture over the cooked egg noodles. Garnish with fresh parsley.
