- Pita bread4 large
- Harissa paste3 tbsp
- Lemon juice3 tbsp
- Olive oil3 tbsp
- Feta cheese6 oz
- Cream cheese2 oz
- Red onion1/2 medium
- Red wine vinegar1/4 cup
- Sugar1 tsp
- Saltto taste
- Black pepperto taste
- Fresh mint1/4 cup, chopped

For the pickled onions: Thinly slice red onion. In a jar, combine red onion, red wine vinegar, sugar, and a pinch of salt. Let sit for at least 30 minutes.

For the whipped feta: Crumble feta cheese and blend with cream cheese and 1 tbsp olive oil until smooth and creamy. Season with salt and pepper.

For the chicken marinade: Cut chicken thighs into bite-sized pieces. In a bowl, mix harissa paste, lemon juice, 2 tbsp olive oil, salt, and pepper. Add chicken and toss to coat. Marinate for at least 30 minutes.

Grill or pan-fry the marinated chicken until cooked through and slightly charred.
