Ingredients
- Milk2 cups
- Sugar1/2 cup
- Cornstarch1/4 cup
- Egg Yolks3 large
- Butter1 tablespoon
- Vanilla Extract1 teaspoon
- Ripe Banana1 medium, mashed
- Vanilla Wafers, crushed1/2 cup
- All-purpose Flour1/2 cup
- Eggs, beaten2 large
- Panko Breadcrumbs1 cup
- Vegetable Oil, for frying3 cups
- Powdered Sugar, for dustingas needed

Prepare the pudding: In a saucepan, whisk sugar, cornstarch, and salt. Gradually whisk in milk. Cook over medium heat, stirring, until thickened and boiling. Boil for 1 minute.

Temper egg yolks by whisking in 1 cup of hot milk mixture, then return to saucepan. Cook for 2 more minutes, stirring. Remove from heat, stir in butter and vanilla.

Stir in mashed banana and crushed vanilla wafers. Pour into a shallow dish, cover with plastic wrap touching the surface, and chill until firm (at least 2 hours).

Once firm, scoop small portions of the pudding mixture and roll into balls (about 1-inch diameter).

Set up a dredging station: one bowl with flour, one with beaten eggs, and one with panko breadcrumbs.

Roll each pudding ball first in flour, then dip in egg, and finally coat thoroughly with panko breadcrumbs.

Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C).

Carefully fry the coated balls in batches for 2-3 minutes, until golden brown and crispy. Do not overcrowd the pot.
