Wash the beetroots thoroughly and boil or bake them until tender. This can take 45-60 minutes depending on size.

Once cooked, let the beetroots cool slightly, then peel them. Grate the beetroots finely.

Mince the garlic clove very finely or press it through a garlic press.

In a bowl, combine the grated beetroots, mayonnaise, and minced garlic. Mix well.
