- Ground lamb1/2 lb
- Onion1 medium, finely chopped
- Garlic3 cloves, minced
- Harissa paste1-2 tbsp (or to taste)
- Canned crushed tomatoes28 oz
- Cumin1 tsp
- Coriander1 tsp
- Cinnamon1/4 tsp
- Saltto taste
- Black pepperto taste
- Eggs6-8
- Fresh mintfor garnish
- Chili flakesfor garnish

Heat olive oil in a large skillet or tagine base over medium-high heat. Add ground lamb and cook, breaking it up, until browned. Drain excess fat.

Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and harissa paste, cook for 1 minute until fragrant.

Stir in crushed tomatoes, cumin, coriander, and cinnamon. Season with salt and black pepper. Bring to a simmer, then reduce heat and cook for 10 minutes.

Create wells in the sauce and crack eggs into them.

Cover and cook for 5-8 minutes, until eggs are set to your preference.
