- Potato starch1 cup
- Salt1 tsp
- Black pepper1/2 tsp
- Vegetable oil for frying4 cups
- Gochugaru (Korean chili flakes)2 tbsp
- Soy sauce3 tbsp
- Honey3 tbsp
- Garlic, minced6 cloves
- Ginger, grated1 tsp
- Rice wine or mirin1 tbsp
- Toasted sesame seeds1 tbsp
- Fresh minced garlic for garnish1 tbsp

Pat chicken pieces dry. Season with salt and pepper.

Dredge chicken pieces thoroughly in potato starch. Shake off excess.

Heat vegetable oil in a deep pot to 350°F (175°C). Fry chicken in batches for 8-10 minutes until golden. Drain.

Increase oil temperature to 375°F (190°C). Double-fry chicken for 2-3 minutes until very crispy. Drain.

In a saucepan, sauté minced garlic and ginger in a little oil until fragrant. Add gochugaru, soy sauce, honey, rice wine, and stir well.

Cook the sauce over medium heat until it thickens slightly. Be careful not to burn the garlic.

In a large bowl, toss the double-fried chicken with the spicy garlic sauce until evenly coated.
