A classic Swabian-style German potato salad, featuring tender potatoes dressed in a warm, tangy vinaigrette with bacon, onions, and vinegar. Served warm, it's a hearty and flavorful side dish.

- Waxy potatoes (like Yukon Gold)1 kg
- Bacon150 g
- Yellow onion1 medium
- White wine vinegar100 ml
- Vegetable broth100 ml
- Sugar1 tsp

- Fresh parsley2 tbsp, chopped

Boil the potatoes in their skins until tender. Drain, let cool slightly, then peel and slice them about 0.5 cm thick.

While potatoes are cooking, dice the bacon and finely chop the onion.

Fry the bacon in a pan until crispy. Remove bacon and set aside, leaving the rendered fat in the pan.

Add the chopped onion to the bacon fat and sauté until softened and translucent.

Add the white wine vinegar and vegetable broth to the pan with the onions. Bring to a simmer and cook for 2-3 minutes. Stir in sugar, salt, and pepper.

Place the sliced potatoes in a large bowl. Pour the warm vinaigrette over the potatoes and gently toss to coat. Let it sit for at least 15-20 minutes for the flavors to meld.

Stir in the crispy bacon bits and chopped fresh parsley just before serving. Serve warm.
