- Canned white beans, drained and rinsed800g
- Pancetta or smoked bacon, diced100g
- Onion, medium1
- Garlic cloves2
- Carrots1
- Zucchini1
- Potatoes1
- Vegetable broth500ml
- Tomato paste1 tbsp
- Parsley, freshsmall bunch
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste

Heat olive oil in a large pot over medium heat. Add diced pancetta and cook until crispy. Remove pancetta and set aside, leaving the rendered fat in the pot.

Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic, diced carrots, zucchini, and potatoes. Cook for another 5-7 minutes, stirring occasionally.

Stir in the tomato paste and cook for 1 minute until fragrant.

Add the drained and rinsed beans and the vegetable broth. Bring to a simmer.

Cover and cook for 20-25 minutes, or until the potatoes are tender and the stew has thickened slightly. Stir occasionally.

Stir in the cooked pancetta and chopped fresh parsley (reserve some for garnish).

Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
