- Pork shoulder800g
- Potatoes800g
- Onions2 large
- Garlic4 cloves
- Bacon150g
- Diced tomatoes400g
- Beef broth400 ml
- Smoked paprika1 tbsp
- Dried thyme1 tsp
- Black pepper1 tsp
- Saltto taste
- Olive oil2 tbsp

Cut the pork into large cubes. Peel and chop the potatoes into large chunks. Chop the onions and mince the garlic.

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot.

Add the pork cubes to the pot and brown them in the bacon fat. Remove pork and set aside.

Add the onions to the pot and sauté until softened, about 5-7 minutes.

Add the minced garlic, smoked paprika, and thyme. Cook for 1 minute until fragrant.

Return the pork to the pot. Add the potatoes, diced tomatoes, beef broth, salt, and black pepper. Stir well.

Bring to a simmer, then reduce heat to low, cover, and cook for 2-2.5 hours, or until the pork and potatoes are very tender.

Stir in the reserved crispy bacon just before serving. Adjust seasoning if needed.
