- Bay leaf1

Preheat oven to 325°F (160°C).

Heat olive oil in a Dutch oven or large oven-safe pot over medium-high heat. Season beef cubes with salt and pepper. Brown beef in batches, then remove and set aside.

Add chopped onion and sliced carrots to the pot. Sauté until softened, about 5-7 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Stir in tomato paste and paprika, cook for 1 minute.

Return beef to the pot. Add diced tomatoes, beef broth, and bay leaf. Bring to a simmer.

Cover the pot and transfer to the preheated oven. Bake for 1.5 to 2 hours, or until beef is tender.

Remove from oven. Stir in broccoli florets. Cover and let stand for 10 minutes, or until broccoli is tender-crisp.
