- Yellow onions2 large
- Leeks (white and light green parts only)2 large
- Feta cheese8 oz
- Sirene cheese (optional, for authenticity)4 oz

- Olive oil2 tablespoons
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

Clean and thinly slice the leeks. Thinly slice the onions. Sauté both in olive oil until softened and lightly caramelized. Let cool.

In a bowl, whisk eggs. Crumble in feta and sirene (if using). Add cooled leeks and onions, salt, and pepper. Mix well.

Preheat oven to 375°F (190°C). Brush a 9x13 inch baking dish with melted butter.

Layer phyllo sheets in the dish, buttering each layer (about 8 sheets for the base).
