- Veal cutlets600g
- Pancetta or thick-cut bacon100g
- Shallots2
- Garlic cloves3
- Cremini mushrooms200g
- Tomato paste1.5 tbsp
- Dry white wine150ml
- Veal or chicken broth300ml
- Worcestershire sauce1 tsp
- Butter1 tbsp
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh dill for garnisha small bunch

Cut veal cutlets into bite-sized pieces. Season with salt and pepper.

Dice pancetta and cook in a large skillet over medium heat until crisp. Remove pancetta, leaving fat in the skillet.

Add olive oil and butter to the skillet. Sear veal pieces until golden brown on all sides. Remove veal and set aside.

Finely chop shallots and mince garlic. Slice mushrooms. Add shallots to the skillet and sauté until softened, about 3-4 minutes.

Add garlic and mushrooms, cook until mushrooms are browned and tender, about 5-7 minutes.

Stir in tomato paste and cook for 1 minute.

Pour in white wine and scrape the bottom of the skillet to deglaze. Let it reduce by half.

Add veal broth and Worcestershire sauce. Bring to a simmer.

Return veal and pancetta to the skillet. Simmer gently for 20-25 minutes, or until veal is cooked through and the sauce has thickened.

Adjust seasoning with salt and pepper.
