- Fresh spinach700 g
- Basmati rice200 g
- Onion1 medium
- Garlic2 cloves
- Chicken or vegetable broth450 ml
- Olive oil3 tbsp
- Butter1 tbsp
- Feta cheese100 g
- Pine nuts30 g
- Lemon zest1 tsp
- Fresh mintsmall bunch
- Saltto taste
- Black pepperto taste

Wash and roughly chop the spinach. Finely chop the onion and mince the garlic.

Toast the pine nuts in a dry skillet over medium-low heat until golden brown. Set aside.

Heat olive oil and butter in a pot over medium heat. Sauté the onion until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the Basmati rice and stir for 2 minutes until lightly toasted.

Pour in the broth, lemon zest, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.

While the rice cooks, blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water. Chop coarsely.

Once the rice is cooked, gently fold in the chopped spinach, crumbled feta, and most of the toasted pine nuts.

Let it rest, covered, for 5 minutes. Garnish with remaining pine nuts and fresh mint before serving.
