- Fresh dill, chopped1/4 cup
- Fresh parsley, chopped1/4 cup

Preheat oven to 180°C (350°F). Grease a baking dish (approx. 9-inch round or square) with olive oil.

Prepare the kadaif: Gently unravel the kadaif pastry. In a large bowl, toss the kadaif with most of the olive oil (reserve some for drizzling) until well coated.

Prepare the filling: In a separate bowl, combine crumbled feta cheese, chopped dill, parsley, mint (if using), the egg, salt, and black pepper. Mix gently.

Assemble the savory kadayif: Press half of the olive oil-coated kadaif into the bottom of the prepared baking dish.

Spread the feta and herb mixture evenly over the kadaif base.

Top with the remaining kadaif, pressing gently to cover the filling.

Drizzle the reserved olive oil over the top layer of kadaif.

Bake for 30-35 minutes, or until the top is golden brown and crisp.
