- Sour cream1 cup

- Graham cracker crumbs1.5 cups
- Unsalted butter, melted6 tbsp

Preheat oven to 350°F (175°C).

For the crust: Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press firmly into the bottom of a 9-inch springform pan.

Bake the crust for 10 minutes. Let cool.

In a large bowl, beat cream cheese until smooth. Gradually beat in the remaining sugar.

Beat in eggs one at a time, mixing just until combined after each addition.

Stir in sour cream, heavy cream, vanilla extract, and lemon zest until just combined.

Pour the filling over the cooled crust.

Bake for 60-75 minutes, or until the edges are set and the center is almost set.

Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
