  • Whole Milk500 ml
  • Heavy Cream250 ml
  • Egg Yolks4 large
  • Granulated Sugar150 g
  • Vanilla Extract1 tsp
  • Saltpinch

    In a saucepan, heat the milk and heavy cream over medium heat until just simmering. Do not boil.

    In a separate bowl, whisk together the egg yolks and sugar until pale and slightly thickened.

    Temper the egg yolks by slowly whisking about half of the hot milk mixture into the yolk mixture. Then, pour the tempered yolk mixture back into the saucepan with the remaining milk.

    Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon. Do not let it boil.

    Remove from heat and stir in the vanilla extract and salt. Strain the custard through a fine-mesh sieve into a clean bowl.

    Cover the surface of the custard directly with plastic wrap to prevent a skin from forming. Chill in the refrigerator for at least 4 hours, or preferably overnight.

    Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.

    Transfer the churned ice cream to an airtight container and freeze for at least 2-3 hours to firm up before serving.
