- White beans (e.g., cannellini)1.5 cups cooked
- Rice (cooked)1 cup
- Onions1 medium
- Chorizo sausage (Spanish or Mexican)150g, casing removed
- Diced tomatoes (canned)1/2 cup
- Garlic2 cloves, minced
- Chili flakes1/4 teaspoon (or to taste)
- Olive oil1 tablespoon
- Cilantro2 tablespoons chopped
- Saltto taste
- Black pepperto taste
- Water1/2 cup

Preheat oven to 180°C (350°F). Cut off tops of bell peppers, remove seeds and membranes. Blanch peppers for 2-3 minutes, then drain.

In a pan, sauté crumbled chorizo until browned. Remove chorizo, leaving some fat in the pan. Sauté chopped onion and minced garlic in the chorizo fat until softened.

In a bowl, combine the cooked beans, cooked rice, sautéed onion and garlic, browned chorizo, diced tomatoes, chili flakes, chopped cilantro, salt, and pepper. Mix well.

Stuff the blanched peppers with the chorizo and bean mixture. Place upright in a baking dish.

Pour water into the baking dish. Cover with foil.

Bake for 40-50 minutes, or until peppers are tender. Remove foil for the last 10 minutes.
