  • Cremini mushrooms250g
  • Shallot1
  • Garlic1 clove
  • Heavy cream150ml
  • Chicken broth50ml
  • Olive oil2 tbsp
  • Butter1 tbsp
  • Saltto taste
  • Black pepperto taste
  • Fresh chivesfor garnish

    Season chicken cutlets with salt and pepper.

    Slice mushrooms and finely mince shallot and garlic.

    Heat olive oil in a skillet over medium-high heat. Sear chicken cutlets for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and keep warm.

    Add butter to the same skillet. Add shallots and sauté until softened, about 2 minutes.

    Add mushrooms and cook until browned, about 5-7 minutes.

    Add minced garlic and cook for 30 seconds until fragrant.

    Pour in chicken broth and scrape the bottom of the pan. Let it reduce slightly.

    Season sauce with salt and pepper. Return chicken to the pan briefly to coat with sauce, or pour sauce over chicken on plates.
