- Cremini mushrooms250g
- Shallot1
- Garlic1 clove
- Heavy cream150ml
- Chicken broth50ml
- Olive oil2 tbsp
- Butter1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh chivesfor garnish

Season chicken cutlets with salt and pepper.

Slice mushrooms and finely mince shallot and garlic.

Heat olive oil in a skillet over medium-high heat. Sear chicken cutlets for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and keep warm.

Add butter to the same skillet. Add shallots and sauté until softened, about 2 minutes.

Add mushrooms and cook until browned, about 5-7 minutes.

Add minced garlic and cook for 30 seconds until fragrant.

Pour in chicken broth and scrape the bottom of the pan. Let it reduce slightly.
