Clean and prepare the chicken hearts, rinsing and patting them dry.

Melt 50g of butter in a skillet over medium-high heat.

Add the minced garlic and sauté for 30 seconds until fragrant.

Add the chicken hearts, season with salt and pepper, and sear for 5-7 minutes until browned.

Pour in the white wine and let it simmer and reduce by half, scraping up any browned bits.

Reduce heat to low. Stir in the remaining 30g of butter until melted and the sauce is glossy.
