Ingredients

  • Beef sirloin or tenderloin400 g
  • Mushrooms (e.g., cremini)250 g
  • Shallots1
  • Garlic1 clove
  • Dijon mustard2 tbsp
  • Puff pastry300 g
  • Egg yolk1
  • Olive oil2 tbsp
  • Saltto taste
  • Black pepperto taste

    Cut beef into 2-3 cm cubes. Sear quickly on all sides in a hot pan with olive oil. Season with salt and pepper. Let cool.

    Finely chop mushrooms, shallots, and garlic. Sauté in the same pan until moisture evaporates and mixture is dry. Season. Let cool.

    Cut puff pastry into small squares or rounds. Brush each with Dijon mustard.

    Place a piece of seared beef and a spoonful of duxelles onto each pastry piece. Fold pastry to enclose, creating small parcels or turnovers. Seal edges.

    Brush with egg yolk. Place on a baking sheet.

    Preheat oven to 200°C (400°F). Bake for 15-20 minutes, or until golden brown and puffed.
