Steps
- 1
Divide ground beef into 4 equal portions and gently form into patties, about 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent them from puffing up during cooking.
- 2
Season both sides of the patties generously with salt and black pepper.
- 3
Preheat your grill or a cast-iron skillet over medium-high heat.
- 4
Cook the patties for 3-4 minutes per side for medium-rare, or longer to your desired doneness. Avoid pressing down on the patties while cooking to keep them juicy.
- 5
During the last minute of cooking, place a slice of cheddar cheese on top of each patty and cover to allow it to melt.
- 6
While the patties are cooking, lightly toast the inside of the sesame seed buns on the grill or in a pan.
- 7
Assemble the cheeseburgers: spread ketchup and mustard on the bottom bun, place the cheese-topped patty on top, then add lettuce, tomato slices, red onion rings, and pickle slices. Top with the other half of the bun.
