Ingredients

- Monterey Jack cheese, shredded2 cups
- Vegetable oil or lard2 tbsp
- Saltto taste

Heat a lightly oiled griddle or frying pan over medium heat.

Place one tortilla on the hot surface. Sprinkle half of the tortilla with 1/4 cup of shredded cheese.

Fold the other half of the tortilla over the cheese to create a half-moon shape.

Cook for 2-3 minutes per side, until the tortilla is golden brown and the cheese is melted and gooey. Flip carefully.

Remove from the pan, cut into wedges, and serve immediately.
