Ingredients
- Yukon Gold potatoes2 lbs
- large eggs4
- celery stalks3
- yellow onion1/2 cup, finely chopped
- mayonnaise1 cup
- dijon mustard2 tbsp
- apple cider vinegar1 tbsp
- fresh dill, chopped2 tbsp
- saltto taste
- black pepper

Boil potatoes until tender but not mushy. Drain and let cool slightly, then cut into 1-inch cubes.

Hard-boil eggs, peel, and chop. Finely chop celery and yellow onion.

In a large bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar.
