Ingredients
- waxy potatoes (like red or fingerling)1.5 lbs
- bacon4 slices, chopped
- yellow onion1/4 cup, finely chopped
- white wine vinegar1/4 cup
- sugar1 tsp
- chicken broth2 tbsp
- fresh parsley, chopped2 tbsp
- fresh chives, chopped1 tbsp
- saltto taste
- black pepper

Boil potatoes in salted water until tender. Drain, let cool slightly, and slice into 1/4-inch rounds.

Cook bacon in a skillet until crisp. Remove bacon, leaving drippings. Sauté chopped onion in bacon drippings until softened.

Whisk together white wine vinegar, sugar, and chicken broth. Pour over the onions and bring to a simmer.

Add the sliced potatoes to the skillet with the dressing. Gently toss to coat. Cook for a few minutes until heated through.
