Ingredients
- Day-old cooked rice4 cups
- Eggs2 large
- Soy sauce3 tablespoons
- Sesame oil1 tablespoon
- Vegetable oil2 tablespoons
- Garlic2 cloves, minced
- Ginger1 teaspoon, grated
- Frozen peas1/2 cup
- Carrots1/2 cup, diced
- Cooked chicken or pork1 cup, diced
- Scallions2, chopped
- Saltto taste
- Black pepperto taste

Whisk eggs with a pinch of salt and pepper. Scramble them in a lightly oiled wok or large skillet over medium-high heat until just cooked. Remove from wok and set aside.

Add vegetable oil to the wok over high heat. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.

Add diced carrots and peas to the wok. Stir-fry for 2-3 minutes until slightly tender.

Add the day-old cooked rice to the wok. Break up any clumps with your spatula. Stir-fry for 5-7 minutes, ensuring the rice is heated through and slightly toasted.

Push the rice to one side of the wok. Add the diced cooked chicken or pork to the empty side and stir-fry for 1-2 minutes until heated through.

Pour soy sauce and sesame oil over the rice. Add the scrambled eggs back into the wok. Stir everything together to combine and coat evenly.

Stir-fry for another 1-2 minutes until everything is well mixed and heated through. Season with salt and black pepper to taste.

Stir in most of the chopped scallions. Serve immediately, garnished with the remaining scallions.
