    Cook brown rice according to package directions. While rice is cooking, peel and dice the yam into 1-inch cubes. Toss yam cubes with 1 tbsp cooking oil, salt, and pepper. Spread on a baking sheet and roast at 400°F (200°C) for 20-25 minutes, or until tender and slightly caramelized.

    Drain the sardines, reserving a little oil if desired for extra flavor. Gently flake the sardines.

    Heat the remaining 1 tbsp cooking oil in a non-stick skillet over medium-high heat. Crack the eggs into the skillet and fry to your desired doneness (sunny-side up or over-easy recommended for a runny yolk). Season with salt and pepper.
