
Traditional Greek Village Salad (Horiatiki)

A classic, rustic Greek salad featuring fresh vegetables, Kalamata olives, and feta cheese, dressed simply with olive oil and oregano. No lettuce is used in the traditional version.

Ingredients
- Ripe tomatoes4 large
- Cucumber1 large
- Green bell pepper1 large
- Red onion1 medium
- Kalamata olives1 cup
- Feta cheese block200g
- Extra virgin olive oil1/4 cup
- Dried Greek oregano1 tbsp
- Saltto taste
- Black pepperto taste

Wash and roughly chop the tomatoes into large, rustic pieces. Place them in a large serving bowl.

Peel the cucumber (optional, but traditional), remove seeds if large, and cut into thick half-moons or chunks. Add to the bowl.

Core and seed the green bell pepper, then slice into thick rings or chunks. Add to the bowl.

Peel and thinly slice the red onion into rings. Add to the bowl.

Add the Kalamata olives to the bowl.

Place the block of feta cheese on top of the vegetables.

Drizzle generously with extra virgin olive oil.

Sprinkle with dried Greek oregano.

Season with salt and freshly ground black pepper to taste.
