Ingredients
- Prawns250g, peeled and deveined
- White bread8 slices, crusts removed
- Egg white1
- Cornstarch1 tbsp
- Sesame oil1 tsp
- Shaoxing wine1 tsp
- White pepper1/4 tsp
- Salt1/4 tsp
- Sesame seeds2 tbsp
- Vegetable oilfor deep frying

Finely mince the prawns, then mix with egg white, cornstarch, sesame oil, Shaoxing wine, white pepper, and salt. Stir in one direction until a paste forms.

Spread the prawn mixture evenly onto one side of each bread slice, covering the surface.

Press sesame seeds onto the prawn mixture.

Cut each bread slice into two or three triangles.

Heat vegetable oil in a wok or deep pan to 170°C (340°F).

Carefully fry the prawn toast, sesame seed side down first, for 2-3 minutes until golden brown and crispy. Flip and fry the other side for another 1-2 minutes.
