
Black Forest Mousse Cups

Ingredients
- Dark chocolate (70% cocoa)150g
- Eggs3 large, separated
- Granulated sugar50g
- Heavy cream200ml
- Kirschwasser (optional)2 tbsp
- Sour cherries (canned or jarred, drained)150g
- Cherry liqueur or syrup2 tbsp
- Chocolate shavings or curls20g
- Water1 tbsp

Melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly.

In a separate bowl, whisk egg yolks with half the sugar until pale. Gradually whisk in the melted chocolate.

Whip heavy cream until soft peaks form. If using, stir in Kirschwasser. Gently fold the whipped cream into the chocolate mixture.

In a clean bowl, beat egg whites until stiff peaks form. Gradually add the remaining sugar and continue beating until glossy.

Gently fold the beaten egg whites into the chocolate mixture in two additions until just combined.

Spoon the mousse into 6 individual serving cups or ramekins. Chill for at least 2 hours, or until set.

Meanwhile, gently warm the drained cherries with cherry liqueur or syrup and 1 tbsp water. Let cool.

Top the set mousse with the cherry mixture and garnish with chocolate shavings.
