Ingredients
- Cooked chicken breast, shredded500g
- Mayonnaise150ml
- Mild curry powder2 tbsp
- Apricot chutney or jam2 tbsp
- Sultanas or raisins50g
- Flaked almonds, toasted25g
- Lemon juice1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsley, chopped (for garnish)1 tbsp

In a large bowl, combine the mayonnaise, curry powder, apricot chutney (or jam), and lemon juice. Stir well until smooth.

Add the shredded cooked chicken, sultanas, and toasted flaked almonds to the bowl. Season with salt and black pepper to taste.
