Preheat oven to 160°C (325°F). Grease and line the bottom of a 23cm (9-inch) springform pan with parchment paper.

Melt the bittersweet chocolate and unsalted butter together in a heatproof bowl set over a saucepan of simmering water (bain-marie), stirring until smooth. Remove from heat and let cool slightly.

In a separate large bowl, whisk together the granulated sugar and eggs until well combined. Stir in the vanilla extract.

Gradually whisk the slightly cooled chocolate mixture into the egg mixture until smooth and fully incorporated.

Pour the batter into the prepared springform pan.
