A classic Balkan savory pastry made with thin, flaky phyllo dough layered with a rich, creamy cheese filling. Baked until golden brown and crispy.

- Feta cheese500g
- Sirene cheese (Bulgarian white brine cheese)250g
- Eggs3
- Greek yogurt150g
- Butter, melted100g
- Vegetable oil50ml
- Saltto taste
- Black pepperto taste

Crumble the feta and sirene cheeses into a large bowl. Add the eggs and Greek yogurt. Season with salt and pepper. Mix well until combined.

Prepare the phyllo dough: lightly brush each sheet with melted butter and vegetable oil mixture. Layer 4-5 sheets together, then spread a thin layer of the cheese mixture over the top.

Roll the layered phyllo dough tightly into a long log. Coil the log into a spiral shape and place it in a greased baking dish.

Repeat the layering, filling, and rolling process with the remaining phyllo sheets and cheese mixture, adding each new spiral next to the previous one in the baking dish.

Brush the top of the entire burek with the remaining butter and oil mixture.

Bake in a preheated oven at 190°C (375°F) for 40-50 minutes, or until golden brown and crispy.
