- Brown sugar80g

- Mixed spice (cinnamon, ginger, cloves)1.5 tsp

In a large bowl, combine flour, baking powder, mixed spice, and salt.

In a separate bowl, whisk together honey, melted butter, brown sugar, and egg until well combined.

Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. Do not overmix.

Chill the dough for 30 minutes to make it easier to handle.

Preheat oven to 190°C (375°F). Line baking sheets with parchment paper.

Roll dough into small balls (about 2.5 cm diameter) and place them on the baking sheets, leaving some space between them.

Flatten each ball slightly with a fork or the palm of your hand.

Bake for 10-12 minutes, or until the edges are lightly golden.

Let cool on baking sheets for a few minutes, then transfer to a wire rack to cool completely.
