
Raštika sa Suhim Mesom (Traditional)

A hearty and traditional Balkan dish featuring collard greens (raštika) slow-cooked with smoked dried meat (suho meso) and aromatic spices. This is a comforting and flavorful stew, perfect for a cold day.

Sastojci
- Raštika (collard greens)1 kg
- Smoked dried beef or pork (suho meso)300 g
- Onion1 large
- Garlic3 cloves
- Smoked paprika1 tsp
- Bay leaf2
- Saltto taste
- Black pepperto taste

Wash the raštika thoroughly and remove tough stems. Chop the leaves into bite-sized pieces.

Soak the dried meat in cold water for at least 2 hours, or overnight, to reduce saltiness. Drain and cut into cubes.

Finely chop the onion and mince the garlic.

In a large pot or Dutch oven, sauté the onion until translucent.

Add the minced garlic and cook for another minute until fragrant.

Add the cubed dried meat to the pot and brown slightly.

Stir in the chopped raštika, smoked paprika, and bay leaves.

Add enough water to cover the ingredients. Bring to a boil, then reduce heat, cover, and simmer for at least 2-3 hours, or until the raštika is very tender and the flavors have melded. Add more water if needed.

Season with salt and black pepper to taste. Remove bay leaves before serving.

Serve hot, traditionally with cornbread or mashed potatoes.
