A comforting and classic Croatian chicken noodle soup, made with a rich chicken broth, tender chicken pieces, and delicate homemade noodles. This is the quintessential version, perfect for a cold day or when feeling unwell.

- Fresh parsley1 bunch

Place the whole chicken in a large pot, cover with cold water, and bring to a boil. Skim off any foam.

Add chopped carrots, parsnip, celery, onion, garlic, and bay leaf to the pot. Reduce heat, cover, and simmer for 1.5 to 2 hours, or until the chicken is cooked through.

Remove the chicken from the pot and let it cool slightly. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.

While the broth simmers, prepare the noodles: Whisk eggs with a pinch of salt. Gradually add flour to form a stiff dough. Knead for a few minutes, then let it rest for 15 minutes.

Roll out the dough very thinly on a floured surface and cut into thin noodles.

Shred or dice the cooked chicken meat and return it to the strained broth.

Bring the broth back to a gentle simmer. Add the fresh noodles and cook for 3-5 minutes, or until they float and are tender.

Season the soup with salt and black pepper to taste. Stir in chopped fresh parsley just before serving.
