- Potatoes400g
- Chicken or vegetable broth1 liter
- Milk100ml
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste

Clean and thinly slice the leeks.

Peel and dice the potatoes.

Heat olive oil in a pot over medium heat. Add leeks and cook until softened, about 4 minutes.

Add potatoes and broth. Bring to a boil, then simmer for 10-12 minutes until potatoes are very tender.

Blend the soup until smooth using an immersion blender.

Stir in the milk and heat through gently. Do not boil.
