- Canned chickpeas2 cans (400g each), drained and rinsed
- Onion1 medium
- Garlic2 cloves
- Carrots2 medium
- Celery stalks2
- Vegetable broth1 liter
- Tomato paste1 tbsp
- Olive oil2 tbsp
- Dried oregano1 tsp
- Saltto taste
- Black pepperto taste

Finely chop the onion and garlic. Dice the carrots and celery.

In a large pot, heat olive oil over medium heat. Sauté the chopped onion until softened, about 5 minutes. Add garlic and cook for 1 minute.

Stir in the diced carrots and celery, cook for 5 minutes. Add the tomato paste and dried oregano, cook for 1 minute.

Add the drained and rinsed chickpeas and the vegetable broth to the pot.

Bring to a boil, then reduce heat and simmer for 20-25 minutes, allowing flavors to meld and vegetables to become tender.

Season with salt and black pepper to taste.
