- Garlic4 cloves
- Extra virgin olive oil4 tbsp
- Red wine vinegar1 tbsp

Preheat oven to 220°C (425°F).

Wash the bell peppers and pat them dry.

Place the whole peppers on a baking sheet lined with parchment paper.

Roast for 25-30 minutes, turning occasionally, until the skins are blistered and charred in spots.

Transfer the hot peppers to a bowl and cover tightly with plastic wrap or a lid. Let them steam for 10-15 minutes to loosen the skins.

Once cool enough to handle, peel the skins off the peppers. Remove the stems and seeds.

Slice the peppers into strips.

Mince the garlic cloves.

In a bowl, combine the sliced peppers, minced garlic, olive oil, and red wine vinegar.

Season with salt and black pepper to taste. Toss gently to combine.
