- Small cucumbers800 g
- Bell peppers (red)300 g
- Garlic cloves1 head
- Fresh chili peppers2-3

- Black peppercorns1 tbsp
- Mustard seeds1 tbsp
- Vinegar (cider)750 ml
- Water1.5 L
- Salt75 g

Prepare all vegetables as for the traditional recipe. Wash and cut cauliflower into florets, peel and slice carrots, trim green beans, wash cucumbers, and slice bell peppers. Slice fresh chili peppers thinly.

Sterilize large glass jars or a crock.

Layer the vegetables into the jars or crock, adding garlic cloves, dill sprigs, bay leaves, and sliced chili peppers between layers.

In a pot, combine vinegar, water, salt, black peppercorns, and mustard seeds. Bring to a boil and simmer for 5 minutes.

Pour the hot brine over the vegetables, ensuring they are completely submerged.

Seal the jars or cover the crock. For long-term storage, process jars in a boiling water bath for 10-15 minutes. Otherwise, store in a cool, dark place.

Allow to pickle for at least 3-4 weeks. The spice level will increase as it pickles.
