- Onion1/2, chopped
- Garlic2 cloves, minced
- Chili powder1 tsp
- Cumin1/2 tsp

- Cotija cheese1/2 cup, crumbled
- Fresh cilantro1/4 cup, chopped
- Pickled red onions1/4 cup

Peel and dice potatoes into small cubes. Cook in boiling salted water until tender, then drain.

Remove chorizo from casing and crumble into a skillet. Cook over medium heat until browned. Drain excess fat.

Add the cooked diced potatoes, chili powder, and cumin to the skillet. Stir well and cook for 5 minutes until potatoes are slightly crisped.
