Heat a comal or griddle over medium heat.

Warm one corn tortilla on the comal for about 30 seconds per side until pliable.

Sprinkle half of the tortilla with shredded Oaxaca cheese.

Fold the other half of the tortilla over the cheese to create a half-moon shape.

Cook for 2-3 minutes per side, until the tortilla is golden brown and crispy, and the cheese is fully melted.

Remove from comal, cut in half if desired, and serve immediately.
