- Bell pepper (any color)1

- Lime1

- Chili powder1 tsp
- Olive oil2 tbsp

Dice chicken breast into small pieces. Season with salt, pepper, cumin, and chili powder.

Finely chop onion, garlic, bell pepper, and tomatoes. Chop cilantro.

Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through.

Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.

Stir in garlic and cook for 1 minute until fragrant.

Add chopped tomatoes and cilantro. Cook for another 5 minutes until tomatoes are softened.

Squeeze fresh lime juice over the mixture. Adjust seasoning with salt and pepper.
