- Red chili powder1-2 tsp (adjust to taste)
- Turmeric powder1 tsp
- Coriander powder1.5 tsp
- Garam masala1 tsp

- Coconut oil2 tbsp
- Mustard seeds1 tsp
- Curry leaves1 sprig
- Onion1 large, finely chopped
- Tomatoes2 large, pureed
- Coconut milk1 cup
- Lime juice1 tbsp
- Fresh cilantrofor garnish

Cut chicken into bite-sized pieces. In a bowl, combine chicken with ginger-garlic paste, red chili powder, turmeric, coriander powder, garam masala, and salt. Marinate for at least 30 minutes.

Heat coconut oil in a large pot or Dutch oven over medium heat. Add mustard seeds and let them splutter. Add curry leaves and sauté for a few seconds.

Add chopped onion and sauté until golden brown, about 8-10 minutes.

Add the marinated chicken and cook until browned on all sides. This may take about 8-10 minutes.

Stir in the pureed tomatoes and cook for 5 minutes until the oil starts to separate.

Pour in the coconut milk and bring to a simmer. Cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
